So stock models for 8 GB and vary storage from 256 GB to 512GB, then another set of stock models for 16GB then vary storage 512GB to 1TB on those. The M1 (or whatever in the future) needs those stock models. Intel MBPs, the 13" had 8GB for the 2 port versions and 4 port versions were all 16GB RAM and the bumps were storage + processor. Going through Apple, a custom order will have it's own delays and think about people in other countries who don't have the ability to order custom orders through Apple. So if you ever want to get the 16GB, you have to go through Apple. The M1 stock models right now are 8GB and only thing that change is storage.
